Realco: The idea of making Powdered Alcohol from aqua-alcoholic solution (liquor) was developed and implemented by our colleagues Sato Food who have been expert in the manufacture of natural seasonings in Japan for a long time.
As of May 1981, the Japanese Government officially approved Powdered Alcohol as "Liquor", taxable under the Alcohol Tax Law. It falls under the Miscellaneous Liquor category and the name Powdered Alcohol was registered in law.
The patented process eliminates only water from the liquor and its alcohol content and delicate aroma and taste are effectively encapsulated into the powder, dramatically changing its functions and greatly enlarging possible application areas.
Our alcohol powder - REALCO - is used primarily as a food ingredient and additive and has important applications of excellence in cake mixes, ice creams, soups, jellies and jams, biscuits, cheeses, chocolates, hams and sausages, candies, sauces and gourmet coffees - the possibilities are endless!

HOW THE PRODUCT IS MADE
After mixing the liquor used with the encapsulating agent, such as dextrin, at a certain ratio, the mixture is spray-dried by using the lowest possible temperature.
As an example, 1 part of whisky with 40% alcohol and 60% water is mixed with 0.65 part of dextrin to make a slurry. After it is spray-dried, the finished product with 35% alcohol, 3% water and 62% dextrin is obtained.
The finished product has the following specifications:
- Particle Size A few hundred microns in diameter
- WeightIVolume Ratio 0.3 - 0.7
- Alcohol Content Less than 40% by weight
- Water Content Less than 5% by weight
- Extractive Content Higher than 60% by weight
TEXTURE & FLAVOUR
Adding REALCO to your dry mix improves the taste and the product consistency, eliminates the frequent powdery smell of dry mixes and adds a boost to the ordinary everyday soups, cakes and dessert mixes. As is the case with liquid alcohol in food applications, adding REALCO to your recipe also helps accentuate the flavours contained in your other ingredients.

Powdered Alcohol product, if stored under open conditions, tends to lose its alcohol and/or flavour components. Therefore, the product should be in retained laminated pouches with high gas barrier films for a prolonged storage.
The product should be stored in a cool dark place, after it is hermetically sealed.
